Recipe: White Bean and Sage Burgers


Makes 4 burgers.


  • 2 tablespoons olive oil

  • 4 ounces shallots, chopped

  • 1¾ cups drained and rinsed canned white beans

  • ½ cup sliced almonds

  • ½ cup rolled oats (do NOT use quick-cooking or steel-cut oats)

  • 1 large egg

  • 1 tablespoon minced sage

  • 1 teaspoon salt (reduce or omit if the canned beans include salt)

  • ½ teaspoon ground black pepper

  • Heat 1 tablespoon oil in a large skillet over medium heat. Add the shallot. Cook, stirring often, until softened, about 4 minutes. Pour the contents of the skillet into a food processor fitted with the chopping blade.


    Add the beans, almonds, rolled oats, egg, sage, salt and pepper. Pulse until grainy but well-combined.


    Shape the mixture into four patties.


    Heat the remaining tablespoon oil in a large skillet over medium heat. Fry the patties until darkly browned, even a little crunchy, turning once with a large spatula, about 7 minutes in all. -- Adapted from "Cooking Know-How" by Bruce Weinstein and Mark Scarbrough
