Ilene Paley’s Potato Latkes
Makes 4 to 6 servings.
Combine potatoes, onion, matzo meal, eggs, salt and pepper in a large bowl and mix with hands. Heat oil in frying pan. When oil begins to smoke, drop potato mixture by tablespoons into the hot oil and flatten. Fry on both sides until brown. Drain on paper towel and serve with applesauce, ketchup or sour cream.
