TABLE TALK: New look for Lemaire; a sports bar coming to the Marriott
Published: May 28, 2009
The Jefferson Hotel will get a fresh presence with the new Lemaire restaurant, slated to open this summer.
Chef Walter Bundy, a graduate of the New England Culinary Institute, has served as executive chef of the original Lemaire for the past six years. He will continue in the role.
However, Bundy's primary objective now is to present a "farm to table" philosophy by using regional produce and herbs.
The restaurant has been completely renovated, with a new bar and lounge added. A color pattern of golds, tans and creams, accented with pumpkin, will offset the bare wood tabletops and new wood flooring.
Initially, Lemaire will only be open for dinner, with plans to expand with breakfast and lunch service in the fall.
The restaurant seats 139: 16 seats in the bar, 33 in the lounge and 90 in the dining rooms.
