Icebox Cookies

Makes about 5 dozen cookies.

  • 1 cup butter (2 sticks)
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Red sugar sprinkles
  • Green sugar sprinkles
  • In a bowl, beat butter with sugar until well-blended. Add egg and vanilla. Stir in flour until combined. Divide dough into four equal portions. On a sheet of waxed paper, roll one portion of dough into a log. Coat with colored sugar sprinkles, wrap in the wax paper. Repeat with remaining dough portions. Refrigerate dough overnight.

    Preheat oven to 350°. Cut dough logs into ½-inch slices. Bake on ungreased cookie sheet, 10-12 minutes. Remove from pan and place on paper grocery sack. Let cool. Store in airtight container. -- Katie Karaffa
