Recipe Exchange: Ann Jones’ Rainbow Cake

Makes 1 cake.

  • 1½ cups butter (room temperature)
  • 2 cups sugar
  • 5 eggs (room temperature)
  • 3 cups flour
  • 1 teaspoon salt
  • 4 teaspoon baking powder
  • 1 cup milk (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • food coloring of choice
  • Preheat oven to 350°. Combine butter and sugar, blend until creamy. Add eggs one at a time and incorporate. In a separate bowl, sift together flour, salt, baking powder. Alternate adding flour and milk to butter mixture until mixed. Stir in vanilla and lemon extracts.

    Grease and flour 3 9-inch cake pans. Divide batter equally among three bowls. Add 2-3 drops of food coloring to each bowl of batter and incorporate, then pour into cake pans. Bake 20-25 minutes. When done allow to cool for 20-30 minutes, cut each layer to make 2 layers for a total of 6 layers. Top with your favorite chocolate frosting. -- Elvira Clegg
