Recipe: Mandarin Orange Chicken
Makes 6 servings.
Dredge chicken in flour seasoned with pepper. In a skillet, heat oil, add chicken and brown on both sides.
Drain oranges; save juice. Mix juice from oranges with lemon juice, marmalade, orange juice, honey, soy sauce and ginger. Pour mixture over chicken in skillet. Cover; simmer until sauce bubbles and thickens, about 20 minutes. Add oranges to the sauce just before serving.
