Recipe: Mandarin Orange Chicken

Makes 6 servings.

  • 2¼ pounds chicken breast
  • 1 ounce all-purpose flour
  • 1 pinch black pepper
  • 4 tablespoons canola oil
  • 1 12-15 ounce can mandarin oranges
  • 4 tablespoons lemon juice
  • 1 ounce orange marmalade
  • 2 ounces orange juice
  • 2 tablespoons clover honey
  • 1 tablespoon soy sauce
  • ½ teaspoon ground ginger
  • Dredge chicken in flour seasoned with pepper. In a skillet, heat oil, add chicken and brown on both sides.

    Drain oranges; save juice. Mix juice from oranges with lemon juice, marmalade, orange juice, honey, soy sauce and ginger. Pour mixture over chicken in skillet. Cover; simmer until sauce bubbles and thickens, about 20 minutes. Add oranges to the sauce just before serving.
