Recipe: Flan

Makes 10 servings.

  • ½ cup of sugar
  • 5 eggs
  • 5 cups of milk
  • 2 (14.1 ounce) cans sweetened condensed milk
  • 1 tablespoon vanilla extract
  • Preheat the oven at 350°.

    Pour sugar in warm pan over medium heat. Constantly stir sugar until it browns and becomes caramel. Quickly pour approximately 2 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides.

    In a mixer or with a whisk, blend the eggs, milks and the vanilla to make the custard.

    Pour the custard into the caramel-lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water.

    Bake 2 hours in the water bath; check with a knife just to the side of the center. If knife comes out clean, it's ready. Remove and let cool, then refrigerate ramekins a few hours. Invert each ramekin onto a small plate. The caramel sauce will flow over the custard. Serve alone or garnish with berries. -- Aztek Grill
