Recipe: Refried Bean and Cheese Pupusas

  • Corn masa harina flour (tortilla instant corn flour, available in the Latin aisle of most supermarkets)
  • 1 can refried beans
  • Grated mozzarella or other soft white cheese
  • Vegetable or olive oil

    Prepare the tortilla instant corn flour as directed. The consistency should be such that the dough does not stick to your hands.

    In your hand, use the dough to make a ball about 2 inches in diameter. Once you finish, make a hole with your fingers, take some refried beans and cheese and fill the hole with it. Cover the hole with more dough and flatten by using hands in a clapping motion. This takes practice but the goal is to make a disc. Repeat until all the dough has been used.

    Place the pupusa on a preheated flat-iron skillet brushed with vegetable or olive oil.

    Cook about 3 minutes each side.
