Boo’s Hanover Tomato and Lime Salsa

  • 4 medium very ripe Hanover tomatoes
  • 1 fresh jalapeño pepper, seeded and diced
  • 1 tablespoon chopped fresh cilantro leaves
  • 1 medium red or sweet onion, minced
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 tablespoon lime juice
  • Peel, seed and dice tomatoes.

    In a medium bowl, mix together tomatoes, jalapeño pepper, cilantro, onion, garlic, salt and pepper; combine well. Add lime juice and chill well before serving.
